48 pecan halves
1 1/2 cups heavy cream
2 Tblsp butter
1 1/2 cups sugar
1/4 cup light corn syrup
1/2 tsp vanilla

Directions:
Directions:
Heat oven to 300, toast pecans for 10 minutes. Combine cream, sugar, corn syrup, and butter in to sauce pan. Bring to a boil and cook until candy thermometer reaches 280. Immediately stir in vanilla and pour into an 8 inch square pan that has been buttered. Arrange pecan halves on top and press lightly into mixture. Let cool and cut into squares. Wrap in wax paper to storage.
