Crust:
2 c. graham cracker crumbs
1/2 c. butter or margarine, melted
1/2 c. sugar

Filling:
2-8oz pkg. cream cheese, softened
2 cans Eagle Brand sweetened condensed milk
2 T. lemon zest
6-8 lemons, juiced
2-8oz. containers Cool Whip, thawed, divided

1. Combine graham cracker crumbs with melted butter and sugar and press into the bottom of 9x13 pan. Bake at 350 for 5-7 minutes. Let cool.

2. For the filling, combine cream cheese and condensed milk. Beat until smooth. Stir in zest and lemon juice into the cream cheese mixture. Fold in one container of Cool Whip. Pour mixture into prepared crust. Chill 30 minutes.

3. Garnish top with the other container of Cool Whip (and lemon zest if desired).

Make sure the cream cheese is softened otherwise you will end up with a lumpy filling. Recipe can be halved and made in a spring-form pan.
