8 oz. dry elbow macaroni
2 T. butter
2 T. flour
2 c. milk
1/2 t. salt
1/8 t. pepper
2 1/2 c. shredded cheddar
a few chunks of velveeta

Directions:
Directions:
Preheat oven to 350. Lightly grease a 2 qt. baking dish.

In a large pot, bring water to a boil. Add a handful of salt. Cook pasta according to package directions. Drain pasta & set aside.

Meanwhile, prepare sauce. Melt butter in a saucepan. Whisk in flour, & cook 3 minutes, whisking constantly. Slowly add milk, and bring to a boil, stirring constantly. Reduce heat and simmer, whisking often, until sauce thickens, about 5 minutes. Add salt, pepper & cheese. Stir until cheese is melted. Remove from heat & stir in pasta. Pour into prepared dish & sprinkle with remaining 1/2 c. cheese.

Bake 15-20 minutes until cheese is bubbly & top begins to brown.
