Cake
1 1/2 c. cooking oil
2 c. sugar
4 eggs - separated
4 T hot water
2 1/2 c. flour
1 t. cinnamon
Pinch grated nutmeg
1 1/2 c. grated raw sweet potatoes
1 c. chopped pecans
Icing
2 sticks butter
1/2 c. Pet Milk
2 c. coconut
1 c. chopped pecans

Directions:

Cake

Combine cooking oil and sugar. Add egg yolk and hot water.
Stir in potatoes, nuts, beat well. Beat egg whites until stiff and
add to mix. Turn into 3 greased pans.
Bake on 350 for 25 minutes

Icing

Mix butter and milk. Cook 2 minutes. Add coconut and
pecans. Mix well. Spread between layers and on top of cake.
