1 5lb bag of Potatoes; peeled and cubed.
1/2 c celery, diced
1/2 cup of diced onion
1/3 cup White Vinegar
1/3 cup Vegetable Oil
2 tbls chopped Parsley(optioanl)
Salt and Pepper
1/2 - 3/4 cup of Mayonaise

Directions:

Boil potatoes until fork can go through. While potatoes are still warm(not Hot) add the remaining ingredietns.
Mix everything together and refrigerate for a few hours.

This is one of my favorite potato salads. It is creamy and very tasty. I love when Ellen brings this to family functions.
If you like, you can add a couple of hard boiled eggs. Just adjust mayo if necessary.
