1 ½ cups flour
1 egg
1 ½ cups sugar
½ teaspoon salt
1 teaspoon baking soda
½ cup shortening
3 very ripe bananas mashed
1 cup nuts

Directions:
Directions:
Preheat oven to 300º. Spray one 9x5x3 inch loaf pan with a non-stick cooking spray.
Cream the shortening and sugar together. Add egg and mix the dry ingredients and bananas and nuts.
Bake at 300º for one hour or until firm to the touch. When bread is removed from oven, allow it to cool for 10 minutes, then remove from pan and let cool on a rack.

This recipe is from my mother, Phyllis Foote, a Moffitt patient and breast cancer survivor, and the best banana bread baker ever! The recipe was given to her from her long time friend Mayo from Port Tampa, many years ago.
