6 c. peeled, cubed potatoes
3 c. water
1 c. carrots
2 t. parsley flakes
2 chicken bouillon cubes
1 t. salt
1/2 t. pepper
3 c. milk
1/4 c. butter
1/4 c. flour
3/4 lb. Velveeta cheese

Combine first 6 ingredients in large pot; bring to boil; reduce heat and boil 15 minutes. Do not drain. Melt butter in separate sauce pan; stir in flour and milk; cook until thick and bubbly, mixing often. Add cheese; stir until melted. Add cheese mixture to potatoes. Heat all together for 10 minutes, then serve.
