2 (15.5 oz.) cans black beans, drained and mashed
1 C. chopped tomato
1 C. chopped cucumber
1/3 C. sliced olives (optional)
¼ C. chopped green onions
1 T olive oil
1 t. Greek seasoning
1 (4 oz.) package tomato-basil feta cheese, crumbled

Directions:
Directions:
Spread black beans in a shallow 9 inch dish
Combine tomato and next 5 ingredients; toss gently
Sprinkle tomato mixture over beans; top with crumbled feta
Cover and chill thoroughly
Serve with pita chips (buy or bake)

Homemade Pita Chips

1 package white or wheat pita’s
Cut each pita into 8 wedges
Spread on cookie sheet
Sprinkle with salt
Bake at 350 10-12 minutes, or until dry and crisp
