4 quarts okra, sliced
8 Tbsp plain salt
16 Tbsp vinegar
2 quarts water

Directions:
Directions:
Put all ingredients in pot and cook until okra changes color. Remove from heat and fill jars with okra, making sure water covers okra. Place hot jar taps and rings on tightly. Turn filled jars upside down on a towel overnight until sealed. Place jars upright next day. Do not use for several weeks.

To Cook Okra for Winter Meal:
Completely drain water from okra. Place okra in bowl, adding one cup milk. Stir, cover and refrigerate 1-2 hours. Drain and batter okra in cornmeal and flour and fry until golden crusted.
