1 yellow cake mix
1 small lemon instant pudding mix
4 eggs
3/4 c. oil
Glaze:
4 c. powdered sugar
1 lemon, juice and zest (no substitutes)
3 T. oil
3 T. water

Directions:
Directions:
Preheat oven to 350. Spray mini muffin tins with cooking spray liberally. Combine cake mix, pudding mix, eggs, and oil and blend with mixer on medium about 2 minutes. Fill mini muffin tins about half full of batter. Bake 12 minutes. Transfer to a wire cooling rack with wax paper underneath. Dip into glaze while still warm and let set on rack about 1 hour before storing in air-tight containers.
To make glaze, whisk powdered sugar, lemon juice, lemon zest, oil and water. Mix until smooth and glaze consistency (you may need to add a little more water to thin).
