1 purchased pre-made Oreo cookie 8” pie shell (or your own crust recipe cooked and cooled).
1 – 11.5 oz. package Ghiradelli 60% Semi Sweet Chocolate
Chips (I use Publix brand chocolate chips – the mini ones). (I reserve a small amount to put on top when pie is complete)
1 – 12 oz. box Mori-Nu Silken soft tofu (I use whatever Publix has as long as it is marked “silken-soft)
1 teaspoon pure vanilla extract and/or Grand Marnier liqueur (never used the liqueur)
(optional: 1 small tub of Cool Whip (I use Publix brand))

(I reserve a small amount to put on top when pie is complete) Melt chocolate chips in the microwave oven; start on high for 30 seconds, then nuke in additional 15 second segments, stirring and checking for meltedness in between each
segment. DO NOT OVERCOOK.
Pat tofu dry with paper towels and dice into rough ˝” cubes. Place in blender. Pulse blend until smooth.Add melted chocolate to tofu while blending. Stop and scrape down the sides of the blender to assure complete mixing and uniform texture. Blend until smooth. Pour into pie crust, smoothing top with spatula. Refrigerate for at least 2 hours. I top with Publix cool whip and chocolate chips I reserved.

Stan is but don’t tell your guests that it is made with tofu until they
