2 cups cooked pumpkin
3 egg yolks
1 cup brown sugar
1 cup rich milk or cream
1/4 cup butter, melted
3 egg whites, stiffly beaten
1/2 teaspoon cinnamon
1/8 teaspoon cloves
1/2 teaspoon nutmeg
1/2 teaspoon ginger
1/2 teaspoon salt
1 unbaked crust

Combine sugar, spices and pumpkin. Beat egg yolks slightly. Add with milk and melted butter to above mixture blending thoroughly. Fold in egg whites. Pour into unbaked crust and bake in 450 oven 10 minutes. Reduce heat to 350 and bake 35 minutes longer.
