2 large tomatoes, sliced
1 cup yellow squash, sliced
1 cup zucchini, sliced
1 large Vidalia onion, sliced
1 1/2 cups cheddar cheese, shredded
butter
salt and pepper, to taste
1/2 cup grated Parmesan cheese

Directions:
Directions:
Slice tomatoes, place on several layers of paper towels, and sprinkle with salt. Let sit for approximately 15-20 minutes. In a baking dish, layer 1/2 the zucchini, tomato, onion, squash and cheddar cheese, adding salt and pepper to each layer. Repeat with remaining vegetables. Dot with butter and sprinkle with Parmesan cheese. Bake at 350 for 30 to 40 minutes.
