2-4 TBLS extra virgin olive oil
2-4 garlic cloves, crushed
2 lbs ripe tomatoes (6 medium), coarsely chopped
1/4 tsp kosher salt
1/8-1/4 freshly ground black pepper

Directions:
Directions:
In 12 inch skillet or medium saucepan , heat olive oil over medium heat until hot. Add garlic; cook 1 minute or until golden, stirring. Add tomatoes, salt and pepper and cook, uncovered 10 minutes or until slightly thickened. Remove from heat.

Basil: After removing from heat, stir in 1/4 cup loosely packed fresh basil leaves, chopped or
1 tsp of chopped fresh rosemary leaves or
Sage:

After removing from heat, stir in 1 tablespoon margarine or butter and 1 teaspoon chopped fresh sage leaves
