Apple Varieties: Jonathan, McIntosh, Granny Smith, Red or Yellow Delicious
2 1/2 cups water
1 1/2 cups sugar
6 tbsp. cornstarch
1/4 tsp. salt
2 quarts sliced (1/4 inch thick) apples
1/2 cup lemon juice (only if using red or yellow delicious apples)
4 tsp. commercial ascorbic, citric acid mix (such as fruit fresh)

Directions:
Dissolve 1 cup sugar* in 2 cups water by heating gently. Cool and add 4 tsp. ascorbic-citric acid mixture.
Peel & slice 2 quarts of apples into the above mixture. Gently boil the apples in the solution for 5 minutes. Remove from heat and let the apple mixture sit for 10 minutes.
Combine the following ingredients:
1/2 cup sugar
6 tbsp. cornstarch
1/4 tsp. salt

Mix the dry ingredients with 1/2 cup water until a smooth past is formed. Slowly add this paste to the apple mixture and stir just enough to disburse the starch throughout.
Bring the apple filling to a boil and hold for 1 minute. Immediately pour hot filling into quart, pint, or half-pint jars. Process in a bring water bath for 40 minutes (sea level). Yield: 2 quarts or 4 pints.

*The initial 1 cup sugar may be increased or decreased by 1/4 cup without affecting the processing time.

To avoid unsafe product, do not change the proportions in the recipe. Do not attempt to double or triple the recipe.
