2 (8 oz) pkg. cream cheese
2 eggs
3/4 C. white sugar
1 tsp. vanilla extract
1T. lemon juice (optional)
1 (6 oz.) pkg. vanilla wafers

Directions:
Directions:
Preheat oven to 350 degrees. Line miniature muffin pans with miniature paper liners. (I have also used regular muffin pans, makes 24) Crush vanilla wafers and place teaspoon into each paper cup or place on whole cookie in each regular muffin cup. Cream together, with an electric mixture the cream cheese, sugar, eggs, vanilla and lemon juice. Beat until light and fluffy. Fill each miniature muffin liner with this mixture, almost to the top. Bake for 15 minutes. Cool and chill in refrigerator overnight. Top with choice of topping. Garnish with whipped cream, almond etc. as desired.
