"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
This recipe for Caramels, by Donnis Toland, is from The Sharp Family Cookbook,
one of the cookbooks created at FamilyCookbookProject.com. We help
families or individuals create heirloom cookbook treasures.
2 cups sugar 1 3/4 cups white Karo 3/4 cup butter 1 tsp vanilla 1 pint whipping cream (or half and half)
Combine half of the cream, sugar, and syrup. Bring to boil. Add rest of cream and butter so that it does not stop boiling. Cook to firm ball (248º on a candy thermometer). Add vanilla. Pour into 9x13 pan. When cool, cut into squares and wrap in Saran Wrap.
