4 cups cooked rice (cooled) 2 cups cubed chicken or 2 cans of shrimp 1 small can pimento or 1/2 red pepper chopped 2 tbsp onion, chopped 1 cup celery sliced cut 1/4 inch thick 1 green pepper, chopped 1 pkg (box) green peas slightly cooked 1 can diced carrots 1 cup mayonnaise Salt and pepper to taste
Mix all together and refrigerate overnight. Makes a large bowl. Serves 10 to 15 or more.
