1 C. + 2 T. Sifted Cake Flour
tsp. salt
1 tsp. cream of tartar
1 C. egg whites (approx. 1 dozen)
1 tsp vanilla or almond extract

Directions:
Directions:
Divide sugar in . Mix of sugar with flour and sift. Set aside. Mix salt and cream of tartar. Set aside. Beat egg whites, at room temperature, until foamy. Mix in salt and cream of tartar. Continue to beat until mixture is shiny and starting to peak. Add flavoring and 2 T. sugar and beat. Add the rest of the sugar 2 Tablespoons at a time until sugar is gone. Fold in flour and sugar mixture with a spatula of a cup at a time. Pour mixture into 10 inch, ungreased tube pan. Bake at 350 degrees for 40 minutes. Invert cake on bottle until completely cool.
