7 graham crackers
2 Tbsp. melted butter

Filling:
3-8 oz. pkg. softened cream cheese
5 eggs
1 C. sugar
1 tsp. vanilla

Topping:
1 pint sour cream
1/2 C. sugar
1 tsp. vanilla

Directions:
Directions:
Crush graham crackers until very fine. Add melted butter. Mix well. Press firmly to bottom of spring form pan.

Soften cream cheese for 2-3 hours. Add eggs to cream cheese and beat until smooth. Blend in sugar adding vanilla. Beat until very smooth. Pour into pan. For water bath: place pan in double thickness of heavy tin foil which comes up 2-3 inches all around pan. Place this in a larger baking container and add hot water up to the level of the cake batter inside. Bake 1 hour at 300 degrees or until cake is set.

Blend all topping ingredients until smooth. Spread on cake and bake for additional 5 minutes.

Remove from water bath. Discard foil and chill 5-6 hours in refrigerator. Remove from pan and serve. This can be eaten plain or with a fruit compote topping.
