4 boneless skinless chicken breast halves
4 tablespoons olive oil
1 cup chopped onions
1 chopped red pepper
2 thinly diced carrots
2 teaspoons bottled minced garlic
1 can (14 oz) Italian-style stewed tomatoes
1-1/2 cups (6 oz) shredded mozzarella cheese

Directions:

1. Heat 3 Tbsp oil in skillet over medium heat. Add chicken and cook until done. Transfer to plate, cover and keep warm.

2. Heat remaining 1 Tbsp oil in same skillet over medium heat. Add onions, peppers, carrots, and garlic; cook and stir for 3 minutes. Add tomatoes; bring to a simmer. Return chicken to skillet, spooning onion, pepper, carrot, and tomato mixture over chicken.

3. Sprinkle cheese over top, heat until cheese is melted.
