1 pound lean ground beef
2 cups grated potatoes
2 cups grated carrots
1 onion, chopped fine
1 tsp. salt, or to taste
2/3 cup bread crumbs
2 eggs
Season with celery salt, onion salt, etc.

Directions:

Form into meat balls 1 1/2 inch in diameter. Brown well in small amount of oil. Place meat balls in casserole dish. Pour 2 can cream of mushroom soup, diluted with 1/2 can milk over meat. Cover with lid and cook 1 hour at 350.

I like to make into patties rather than balls and then proceed as per instructions or cook the patties in the fry pan in which they were browned on top of the stove. (Cover with lid and cook over low heat).
*This recipe was from a Relief Society cookbook which was published in 1972. Eda Olsen submitted the recipe. It is one I have used dozens of time.
