4 C. cooked rice (1 1/2 cup uncooked Uncle Ben's long grain)
2 C. salad shrimp[
1 small can pimento, chopped
2 T. minced onion, or finely sliced green onions
1 C. chopped celery
1 green pepper, chopped
1 can julienne carrots (can use diced if these are not available.)
1 C. mayonnaise
salt & pepper to taste

Combine all ingredients. Place in covered bowl and let stand in refrigerator overnight.
