"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

1 cups shredded or chopped cooked chicken
2/3 cup picante sauce or salsa

tsp. crushed oregano
tsp salt
8 flour tortillas (large ones are easier to fold)
cup melted butter
1 cup shredded cheddar cheese

Simmer first 6 ingredients for 5 minutes. Brush 1 side of tortilla with melted butter. Spoon 1/3 cup of chicken mixture on unbuttered side of tortilla. Fold in both sides and roll up, placing on baking sheet seam side down.
Bake at 475 degrees for 13 minutes until crisp. Sprinkle cheese on each one and bake just until cheese melts.
Serve with toppings of choice i.e. guacamole, sour cream, sliced olives, tomatoes, lettuce, salsa, etc.
