4-6 boneless chicken breast or 8-10 chicken tenders
2 T. butter
1/2 tsp. salt
1/8 tsp. pepper
3 T. brown sugar
1 T. cornstarch
1/4 tsp. salt
1/4 tsp. ground ginger
1/2 C. orange marmalade
1/2 C. orange juice
1 tsp. lemon juice
Orange slices or 1 can mandarin oranges
1/2 C. cashews (optional)

Melt butter in a large skillet. Brown chicken, sprinkling each side with salt and pepper. Transfer to a 9x12 pan. In a small bowl mix the rest of the ingredients, except nuts and oranges. If marmalade is not available use the juice from the mandarin oranges. Pour over chicken and bake 25-30 minutes at 375. Add oranges and nuts the last 10 minutes.
