2 lbs. sharp, or medium, cheddar cheese, finely grated
Hellman's mayonnaise
1 small jar pimento, chopped (reserve juice)

Directions:
Directions:
Grate cheese into bowl. Add pimento and all the juice. Mix together with mayonnaise until smooth and creamy.

This is a tough recipe...just cheese, mayo, and pimento. A lot of people add chopped onions, or cayenne pepper, or even sweet pickle relish. But in our family, there's no better pimento cheese than this simple recipe. And it was served at every church or family gathering no matter how casual or formal! Enjoy!
