3 c mashed sweet potatoes
1 c sugar
2 eggs
2 oz bourbon
1/2 c margarine

topping
1 c light brown sugar
1/3 c flour
1/3 c butter
1 c chopped pecans

Directions:
Directions:
combine sweet potatoes, sugar, eggs, bourbon and margarine in food processor and mix until smooth. put in greased casserole dish.
cream brown sugar, flour, butter and then add pecans. sprinkle on top of sweet potato mixture. bake at 350 degrees for 30 minutes

1 tbsp vanilla can be substituted for the bourbon, though i don't know why anyone would want to do that!
can be made the night before and refrigerated.
i cook the sweet potatoes in the microwave to save time.
you may not need all the topping mix, depending on how sweet you want it.
