1 3/4 cups all-purpose flour
1 1/2 cups sugar
1 teaspoon baking soda
1/2 teaspoon salt
2 eggs
1 cup mashed very-ripe bananas (2 to 3 medium)
1/2 cup vegetable oil
1/4 cup + 1 heaping tsp. sour cream
1 teaspoon vanilla

Directions:
Directions:
Stir together flour, sugar, baking soda and salt. In another bowl, combine eggs, bananas, oil, sour cream and vanilla. Add to flour mixture, stirring just until moistened. Pour into a greased 5 x 9 inch loaf pan. Bake at 325 for 1 hour (check every 4 to 5 minutes after that - it may take slightly longer than 1 hour). Cool for 10 minutes before removing from pan.
