Per 2 servings

1 Cup of rice
1 1/2 Cups water
1/2 cup coconut milk
2 oz lime juice
about a half handful of coconut (shredded or cut)

butter and salt if desired (i use ACCENT)

Directions:
This is pretty simple in that you cook the rice the same way you would cook rice...

boil the water. reduce to low. add rice, coconut milk, lime juice, and coconut. cover and cook until tender, stirring occasionally.

I also put smidge of butter and ACCENT on mine.
If the lime taste is too subtle, you can add more to your taste.

I made this up one day when making Tequila Lime Chicken. I like the way it tastes with the chicken. The rice can get a little sticky, and if you don't like that, you can add water while cooking.
