8 yellow squash sliced
1 large green bell peppers, chopped
1 large Vidalia onion, chopped
1 cup mayonnaise
1 cup flour
2 eggs, beaten
3/4 stick butter, melted
2 cups cheddar cheese, shredded
1/4 tsp salt
1/2 tsp black pepper

Directions:
Directions:
Preheat oven to 325 and spray 9x13 dish with non-stick cooking spray. In large sauce pan, cook squash, onion, and bell pepper until tender (about 20 minutes on medium high). Drain well. In large bowl, mix mayonnaise, flour, egg, melted butter, salt and pepper and add squash mixture, blending well. Add 1 1/2 cups cheese and blend. Pour mixture into prepared dish and bake 35-45 minutes or until golden brown. Let stand 10 minutes before serving. Enjoy!
