2 cups sweet potatoes, cooked and drained
3/4 cup sugar
2 Tbsp butter
1 tsp vanilla
2 eggs, beaten
inch ginger
pinch nutmeg

Directions:
Directions:
Beat potatoes, add well-beaten eggs, add other ingredients while beating; then add milk until real thin. Pour into uncooked pie crust and cook on 300-325 for 30 to 40 minutes, until it swells and don't shake.
