1/2 c. sugar
1 T. cornstarch
1/4 t. ground cinnamon
4 c. sliced fresh peaches (6 medium)*
1 t. lemon juice
1 c. all-purpose flour**
1 T. sugar
1 1/2 t. baking powder
1/2 t. salt
3 T. firm butter or margarine
1/2 c. milk
2 T. sugar, if desired
Sweetened Whipped Cream if desired

Directions:
Directions:
1. Heat oven to 400 F.
2. In 2-quart saucepan, mix 1/2 c. sugar, the cornstarch and cinnamon. Stir in peaches and lemon juice. Cook over medium-high heat 4 to 5 minutes, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute. Pour into ungreased 2-quart casserole; keep peach mixture hot in oven.
3. In medium bowl, mix flour, 1 T. sugar, the baking powder and salt. Cut in butter, using pastry blender until mixture looks like fine crumbs. Stir in milk. Drop dough by 6 spoonfuls onto hot peach mixture. Sprinkle 2 T. sugar over dough.
4. Bake 25 to 30 minutes or until topping is golden brown. Serve warm with Sweetened Whipped Cream.

*4 c. frozen sliced peaches (from two 1-lb. bags), thawed and drained, can be substituted for the fresh peaches.
**If using self-rising flour, omit the baking powder and salt.

FRESH BLUEBERRY COBBLER: Substitute 4 c. blueberries for the peaches. Omit cinnamon.

FRESH CHERRY COBBLER: Substitute 4 c. pitted red tart cherries for the peaches. Increase sugar in cherry mixture to 1 1/4 c. and cornstarch to 3 T. Substitute 1/4 t. almond extract for the lemon juice.
