6 lbs peeled peached with pits
6 c sugar
1 pt vinegar
1 pt water
1 T ground ginger
In spice bag 2 T whole cloves 4 sticks cinnamon

Directions:
Directions:
Put peeled peaches into a mixture of water, 2 T salt and 2 T vinegar per gallon of water. This prevents darkening. Next mix the sugar,vinegar, water, ginger, and the spice bag and bring to a boil. Rinse and drain the peaches and drop them into the boiling syrup. Cook about 1 minute or until tender when pierce with a toothpick. Remove from heat and fill jars to within 1/2 inch of top with peaches. Fill jars with hot syrup to 1/2 inch of top. Process 20 minutes in boiling water bath. Cool and check to assure jars are sealed.
