6 to 8 lb boneless rib roast
1 T onion salt
1 T garlic powder
1 T paprika
1/2 T freshly ground pepper
1/2 T thyme
a few cloves of garlic peeled and sliced

Directions:
Directions:
Preheat oven to 500. Multiply the weight of the meat times 5. This will give you the number of minutes to leave it in the oven at 500. Wash & dry the roast then rub with olive oil. Insert the garlic in small slits. Mix the spices and rub on the meat.
Stand the roast fat side up in a roasting pan. Put the roast in the preheated oven, close the door and do not open until the precise calculated time. When the time is up, turn the oven off, do not open the door and let the roast remain in the oven for 2 hours. Remove slice and serve.
