1/2 c. finely chopped onion
1/2 c. finely chopped shallots
2 tbsp. olive oil
8 sun-dried tomatoes
rounded 1/4 teaspoon dried thyme
1 1/4 c. water
1/4 tsp. salt
1 c. of whole wheat couscous

Directions:
Directions:
In a medium saucepan sauté the onions in the oil on medium heat until they soften. Add the sun dried tomatoes and thyme, and continue to sauté for about 5 mins. Bring the water to a boil. When the onions are translucent, add the boiling water and the salt and return to a boil. Stir in the couscous, cover and simmer on low for 5 mins. Stir with a fork to fluff the couscous, and serve.
~ optional, lightly sprinkle with feta.
