can use steak butter instead of plain butter: 4 T. room-temperature butter course salt ground pepper 2 T crumbled blue cheese 1 scallion, minced 2 T chopped fresh parsley 1 garlic clove, minced 2 T. prepared white horseradish (squeezed of excess liquid) 1 T. Dijon mustard
