1# ground turkey
1 medium onion, chopped
2 cloves garlic, minced
1/4 tsp. cumin
1 tsp. chili powder
1 sm. can chopped green chilies
1 can stewed tomatoes
6-8 low carb tortillas
2 C. low fat grated cheddar cheese
1 pint low fat cream cheese
2 C. part skim milk mozzerella cheese.

Directions:

Brown and drain well the turkey with onion and garlic.
Add cumin, chili powder, chilies and tomatoes.
Spray bottom of 8x8" pan, line bottom with low carb tortillas.
Put 1/2 meat mixture over tortillas.
Mix cheddar and cream cheese together and spread over meat mixture. It does not spread very easily so I just kind of drop it all over the top!
Add another layer of tortillas and top with the remaining meat mixture.
Top with mozzerella cheese.
Bake at 350 degrees for about 30 minutes.

This has a very Mexican taste and can be served with sour cream and salsa. Carolyn just emailed me that she substituted freshly grated parmesan/cheddar for the moserella and they all liked it better!
