4 eggs (separated)
1/4 cup evaporated milk
2 cups milk
1 cup sugar
4 rounded Tbsp plain flour
1/2 stick butter
3/4 cup shredded coconut
1 tsp vanilla
dash of salt
1 baked pie shell

Meringue (came from Magnolia Fowler)
2 Tbsp cornstarch in 4 Tbsp cold water
1 cup hot water
2 tsp lemon juice
3/4 cup sugar
4 egg whites

Directions:
Directions:
Pie: Mix sugar and flour. Add egg yolks and blend well. Add evaporated milk, stir, then add other milk. Place over boiling water and cook (double boiler), stirring until thickened. Add butter and coconut and cook 5 minutes longer. Cool. Add vanilla. Pour into baked pie shell and top with meringue.

Meringue:
Mix cornstarch in cold water. Stir in boiling water. Cook two minutes, stirring, until thick. Cool. Add lemon juice to egg whites. Beat to soft peaks. Add sugar one tablespoon at the time. Beat until firm and glossy. Add cornstarch and beat. Brown in oven after placing on filling.
