l/2 cup of chopped onion
3 cups chopped zucchini
2 cups of chopped tomato
1/2 cup shredded cheese
1/4 tsp. basil
1/4 tsp parsley
1/4 tsp black pepper

Directions:
Directions:
sautee onions in 2 tbsp. olive oil til cooked. Add basil, parsley, and pepper. Stir into onions. Add zucchini and stir fry til tender. Add tomatoes. Stir. Sprinkle cheese on top and serve. I do this in a teflon pan. Delicious and healthy.
