2 Pounds Ricotta Cheese
2 Pounds flour
2 eggs

Directions:
Directions:
Make a mound in the flour and beat in eggs. Gradually add ricotta and knead till dough gets workable. Add more flour or less, until it is right. Cut into strips and roll with hands into long cigar-like shape. Cut into 3/4-1 inch chunks and roll into shells with fingers or thumb. Lay on waxed paper with flour lightly sprinkled on top. Put paper on cookie sheet and layer again. Can freeze them flat and then put in zip lock bags or boil right away. When they float they are done.
