Rhubarb Coffee Cake Recipe

2 c flour
1 1/2 c chopped rhubarb
1 1/2 c sugar
1 1/2 c shortening
1/2 tsp salt
1 egg
1 tsp vanilla
1c buttermilk
1 tsp soda

Blend sugar, shortening, salt, vanilla, and egg with mixer.
Mix buttermilk and soda. Add to flour, alternating with cream mixture. Beat about 2 minutes.
Add rhubarb to batter
Pour into sprayed 9x13 pan
Sprinkle with about 1/3 c granulated sugar and 1 tsp (or more) cinnamon.
Bake at 350 degrees for 45 min.
