12 corn tortillas
1/2 c olive oil
2 onions, chopped
1/2 c tomato puree
4 qt rich chicken stock
2 c cooked chicken, diced
2 T fresh cilantro
Dash of cayenne pepper and parmesan cheese

Directions:
Directions:
ęCut tortillas into strips and fry in oil until crisp (like tortilla strips). Drain and set aside.
Saute onions in olive oil and add tomato puree and stock.
Add chicken and cilantro
Cook over medium heat for about 1 hr.
Top servings with sprinkle of cayenne, parmesan and tortilla strips. For softer Tortilla strips, add them to the
soup 10-15 minutes b4 thru cooking.
