2 gals. green tomatoes - cut in chunks
1 qt. onion - chopped
1 qt. bell pepper - green or red - chopped
3/4 cup canning & pickling salt
2 qts. vinegar - 5% apple cider or white
5 cups sugar

Directions:
Directions:
In an enamel pan put tomatoes, onion and pepper. Sprinkle with salt and mix well. Put aside for about 1 hour. Drain and rinse with cold water. Add vinegar and sugar. Bring to a boil and simmer until tomatoes change color about 15 minutes. Pack in sterilized jars and seal.
