2 16 oz. cans Louisiana yams, drained
2 eggs
1/4 c. butter, melted
1/2 c. brown sugar
1/2 c. walnuts or pecans, chopped
3/4 t. salt
1/4 t. cinnamon
1 t. vanilla extract
2/3 c. shredded coconut
1 T. butter, melted

Directions:
Directions:
Mash yams in large mixing bowl. Add eggs, butter, sugar, salt, nuts, cinnamon and vanilla extract. Beat until mixture is light and fluffy. Turn into a greased, shallow casserole or 1-quart baking dish. Bake at 325F for 35 minutes. Toss coconut with butter. Sprinkle a border of coconut around edge of casserole. Bake 10-15 minutes until coconut is lightly browned.
