1 lb. breakfast sausage
onion (optional)
salt and pepper
mozzarella cheese (or your favorite)
1 zucchini
butter

Directions:
Directions:
Brown and drain the sausage. The onion, if using, can be put in the meat before cooking or after. Slice the zucchini long ways and scoop out the seeds. Add a couple of dollops of butter to each half and split the sausage into two parts, filling the zucchini. Add the cheese of choice on top and bake @ 350 for one and 1/2 hours, or until zucchini is soft.
