4-5 lbs. fresh beets
2 cups water
2 cups vinegar
2 cups sugar
1/2 tsp.salt
1 tsp. cloves (powdered)
1 Tbsp. cinnamon

Directions:
Directions:
Wash beets and boil in large stock pot till tender. Put all of the remaining ingredients into a pan and bring to a boil, Pour cooked beets into a colander and cool. The skin should come off with no problem. Cut into slices, or leave whole for the smaller ones, and put into prepared jars. Ladle mixture over the jarred beets and seal. A 10 minute hot water bath will finish the job.
