Two 10 ounce packages frozen spinach (drain and press out the water) ¼ cup chopped onion 2 beaten eggs 1 cup grated parmesan cheese 1 cup ricotta cheese or cottage cheese 1 tsp. Salt ¼ tsp. Pepper ¼ tsp. Nutmeg
Put spinach in a bowl. Add remaining ingredients. Mix everything together. Pour mixture into a lightly greased 9” pie plate or add to a frozen pie shell. Bake at 350 degrees for 30 minutes.
