1 lb. lean pork cut into 1 1/2 inch cubes
1/4 c. lard or oil
2 tbsp. all-purpose flour
1 lb. potatoes, cubed
3 c. crushed or finely chopped tomatoes
3/4 c. green chiles, chopped, roasted, peeled
2 garlic cloves, finely chopped
1/4 oz. pequin chile or tabasco sauce
1 1/2 tsp. salt
2 quarts or water or stock

Directions:
Directions:
Heat lard over medium heat in a heavy, 4 quart pot. Dredge pork cubes in flour and drop in pot. After about 15 minutes, when meat is well-browned, add remaining ingredients. Partially cover, simmer over low-medium heat for about 65 minutes. Using less liquid, you can also cook in a covered crock pot for 4 - 6 hours.
