3 Tbl. olive oil
4 leeks, white parts only, cleaned & thinly sliced
5 C. Chicken broth
2 sweet potatoes, peeled & chopped
1- 12oz jar roasted red peppers packed in water, drained
C. fresh dill, chopped

Directions:
Directions:
In a large saucepan over medium heat, warm oil. Saute leeks until tender add broth, sweet potatoes & red peppers. Cook until potatoes are soft; allow soup to cool 10 min. Then puree in blender return to saucepan & stir in dill.
