1 monster leek
2 shallots
1 large package of baby spinach
4 medium carrots
2 tablespoons olive oil
salt and pepper

Directions:
Directions:
Peel and chop carrots.
Add olive oil to large sauté pan then heat over medium heat
Add carrots to heated pan.
Add a pinch of salt and pepper.
While carrots are cooking, julienne the leek and add to pan, then mince shallots and add to pan. This sufficiently stalls so the carrots and leeks have a head start.
Cook to desired tenderness (about 5-8 minutes)
Add all that spinach! Saute until spinach wilts.
Serve straight away.
